Air Fryer Eggplant
A healthy and flavorful way to enjoy eggplant with a tender inside and crispy edges, perfect as a side or snack.
1 medium aubergine (eggplant), diced or sliced
1–2 tablespoons olive oil
Salt and black pepper to taste
Garlic powder or smoked paprika (optional)
Cut aubergine into cubes or rounds, then lightly salt and let sit for 10 minutes to draw out bitterness. Pat dry.
Toss in olive oil and seasonings.
Arrange in a single layer in the air fryer basket.
Cook at 375°F (190°C) for 15–18 minutes, shaking halfway through.
Optional: Sprinkle with Parmesan or herbs before serving.
